Use welding clamps to hold it in place. Also use a folded towel on the outside nose of the beam to lean against.

Attach a double triple folded junk towel that has good texture to her fleshing apron and make sure she puts her weight into the beam.

Seldom I think uses a donut shaped piece of plywood, the center of the donut fits over the tip of the beam and pinches the hide holding it, and the donut sits square in your sternum area so yo lean on it while you flesh
I haven't ever tried it but it seems like it would work well.

Old burlap sack between her and the beam. Lean on it.

I use a block of wood with a hole in it to bind the hide to the beam. I lean on the block. Block needs to be thick enough so the point of the beam doesn’t stick through the block. It’s a game changer. I learned about it on trapperman. I can take a pic of it tomorrow after work.

A big ol clamp may help and maybe set it almost horizontal for her? I struggle with that myself.
She can do it!
