If you zoom in...you can see some little blisters.. Those add a little more crunch. You make those by spraying your bread...and spray the inside of the Top lid with water.

I got a loaf proofing now with a 5 AM bake tomorrow morn.

Do you slice and freeze it ?? I froze this whole loaf will crack it open in a few days. Grilled cheese is a regular meal at noon for me when I'm at the ranch.

She make both boules ..and loaf pans ?? We make boules regular loafs and baggets cinnamon with and without raisins a dark chochalate and a seeded loaf along with sourdough cinnamon rolls. It depends on the week of what sells best but usually regular white sandwich loaves. All done in a regular oven she starts at about 3am Friday morning and bakes until midnight some times it’s a 40 week crammed into 2-3 says if you include clean up. We do einkorn as well but that’s mostly by order
