Itll be done shortly. Do I let rest til bed and put it in the fridge to rewarm it tomorrow? Otherwise, I just discovered a “long hold” in the oven on the internet. Eating at noon.

I wrap mine in foil and a towel put in a cooler for 2 to 3 hrs then eat or put in the fridge.

I did 2 last weekend for our early family Easter. Smoked for 4 hrs then finished in the oven in a roasting pan. I pulled it out around 1130 pm when it hit 200 degrees and let sit on the stove covered overnight. Reheated on 175 from 10-1130 the next morning, ate at 12. And it was just as good as fresh
