I got a real treat today. Pastrami and Swiss on fresh rye and spicy brown mustard. I’m def gonna toast it. Swiss isn’t my favorite but it’ll do.
Mom and I had to drive to three different stores to find pastrami!

Elm, right now my favorite is ribeye sandwiches.
I get ribeyes pretty cheap now because it’s a fringe employee benefit at the meat market where I work now.
We slice them thin, just a tad thicker than a slice of bologna.

I melt some butter and put the ribeyes in the butter and let it fry,,, I then put on some ribeye seasoning that we carry at the store..I toast the bread..
I then throw a slice of Swiss cheese on it and it’s ready to rock.

Toast the bread until it's just firm not fully toasted
Butter both sides and grill it like a toasted cheese sammy
When you flip the pieces of bread add the cheese mustard and meat
Just finish like a regular grilled cheese

Hey you know I LOVE corned beef! But the brisket more than the lunch meat.
I wonder if you can braise a whole pastrami brisket?!

Also got to go with ribeye sandwich

Mint upsets my stomach, oddly enough. I think I’ll top it off with some pickled ramps instead. Or garlic triscuits, or sardines. Or anything else to keep people away

Pastrami IS corned beef brisket, just smoked after curing with pastrami spices, which is mostly coriander....Usually steamed to get it hot again...

So if you like corned beef, you should love pastrami, lol

I wasn't reading this .... made myself lunch .... Pastrami and sweet onion on toasted sourdough bread with horseradish. Christine insisted that I ate something, solitude will be wonderful for a few brief moments, lol, a few breath mints a little later
