Let them start to curl. Just don't let them go to seed and you'll be fine.

Yep. Cut mine yesterday and most were curled. Making pickled scapes today

Sweet pickle spices, water, vinegar, salt, sugar, crushed red pepper... Ends up like a garlic bread and butter pickle with a little kick
