There is nothing more important than the urgency and proper carcass preparation.
I state this from many years of them being harvested animal in my youth yrs.
I have done many.

I read the article when it came out and did a copy of it. I have not made any raccoon brats. The good thng to me about the recipe is you can keep all the other stuff as it is and substitute any other meat for the raccoon that you choose to. I have made some brats in the past from our hog butering. I prefer to make the brat paddies instead of the links.

Very nice, what’s ur preferred way to cook them or any recipes u care to share? From all the critters that is. I was eating everything last year. I was only ever doing smaller coons and possums and only after it was freezing cold.

I will share my knowledge with you.

As I don't want to hear ridiculed opinions, on public forum.
It might take a couple days for me to answer.
Installing a walk in shower unit for my physically disabled daughter.

Almost everything harvested in my rural area was food for the table,
From YOY on the grill to oven roasted.
Can't think of a family in the neighborhood that didn't consume them.

We are talking 45th parallel and north.
But i know it was consumed in the south also.
