I cook them like any other fish. Dip them in egg, bread in cracker crumbs, and pan fry in pork lard.
The flavor is good, not much different than most other fish. The texture is a little bit chewy compared to other fish, almost like a large shrimp or prawn.
We can catch as many as we want. I take advantage of it, couple times a summer the boys and I will catch and clean a couple hundred, saves on grocerie bills.
I've eaten them up here, and out of a couple rivers in eastern Iowa. All of them tasted good to me. They may well be different elsewhere.
