I cook them like any other fish. Dip them in egg, bread in cracker crumbs, and pan fry in pork lard.
The flavor is good, not much different than most other fish. The texture is a little bit chewy compared to other fish, almost like a large shrimp or prawn.
We can catch as many as we want. I take advantage of it, couple times a summer the boys and I will catch and clean a couple hundred, saves on grocerie bills.
I've eaten them up here, and out of a couple rivers in eastern Iowa. All of them tasted good to me. They may well be different elsewhere.

Those are black crappie.
The one on the bottom right is a white crappie

Probably illegal to differentiate in California

A white perch. LOL

A yellow perch is just called a perch around here. I catch lots of those and they're great eating. I don't catch many white perch at all.

What about rockbass or sunfish.
Used to catch lots of those as a kid tossed them back as well as the mudcats,kept some for trapping bait.
Ate the pickerel perch and pike.

Rock bass are fun to catch. Ounce for ounce they put up a pretty good fight compared to most fish. I never ate Mr. Red Eyes though. Always tossed them back.

Most sunfish/pan fish are pretty good eating. They gotta be big enough to make it worth your while though.

2 and 4.

I fillet about 200 of the smallmouth variety a year mostly caught this time of year. Fish tacos gets us through the winter
