Been a long time since I ate one.
I'm cleaning a few out for a farmer. Emmett figured we shouldn't waste them.

Do you just breast them like dove, wrap in bacon/jalapeno, and grill?

These will get bacon wrapped, and smoked over red oak.
We used to breast and pan fry them.

Good eating when you shoot them from blinds in the morning when they come down from their roosts in the bush to eat in the pea fields.
Shot lots in Ireland.

During the Great Depression my Dad would get squabs from the nests in the barn and Grandma would make pie with them.

They were a welcome bonus on dove hunts as a kid. Always thought they were like a big dove

I’d like to get a brown or white color one for a taxidermy project

Nothing wrong with eating them. They feed in the grain fields and a lot of people eat them

IMO, it’s hard to beat pigeon breast halved and seared on hot cast-iron in butter about 45 seconds per side.

I was never a fan of wrapping dove or pigeon breasts in bacon. Both are very delicious meats on their own, why would you want to mask the flavor with bacon?

Eh...wot?

Use to eat them when shot while dove hunting. To me about the same but bigger breasts.

Pigeon is good to eat, but I prefer to sell them. I sold 10 for $315.00 a little over 2 hours ago. I sold 3 ring neck doves for $80.00 right after that. I sold 1 tiny button quail hen for $15.00 yesterday. She didn't weigh much over an ounce. I can buy beef and seafood with that, which I like better.

I saved them for cat trapping. Is there another reason that I should be aware of?
