Coldspring, that`s some real livin` there. You ever save the fat cap off your briskets and mix that in with your venison? Those briskets soaking up about 4 hours of that mesquite smoke, wrap them in foil, give them another 4 hours on the pit. That fat just push`s off. That stuff is like gold to add to burger.

… no sir …. Just chunk up fatty brisket and grind in with the deer

…. Far as bbq brisket goes …. I always leave the fat on … it’ll firm up after a rest and slice along with the meat … that’s what you want
