Trying to makes some pickled quail eggs again and old google said home made picked eggs need to be refrigerated. I'm confused though because isn't pickling the whole deal you djnto make the shelf stable and all ? So do y'all refrigerate your homemade pickled eggs ? O and my brine is 1:1 water to 5% white vinegar with a all the other spices and stuff

You have to refrigerate home made pickled eggs, even if unopened, because the standard vinegar/salt brines used are not shelf stable. Some of the commercial brines are strong enough you don't have to refrigerate the eggs when they are unopened. Some of the stronger commercial brines will even last a couple of weeks open and unrefrigerated.

I have always refrigerated mine after making and eating them. Just to be safe, but they usually dont last too long around here.

An old college mate of mine was likely the most tightwad person in the world. He thought since Listerine mouthwash kills 99.99% of all germs he could just gargle and spit it back into the bottle and he'd never have to buy another one in his lifetime. Well, things started to grow in that Listerine bottle after a few weeks....

...so I say refrigerate.

I remember when pickled eggs and pickled pigs feet were always on the shelf in bars.
I'm just guessing that the commercial pickled products ( eggs , pigs feet ) had chemicals added.
I always keep them in the refrigerator .
I see on a canning site, canning hard boiled eggs , using a pressure canner.
Never tried it , but again they weren't pickled, and the eggs were still in the shell.
Don't know, or even heard of pressure canning pickled products.
I'm guessing again, but the vinegar doesn't penetrate the eggs enough , like pickles and other pickled products.
I don't know, best to just research it, but I don't plan on it.
