I picked one the other day and it was still extremely bitter,, but of course we have not. Had a hard frost either.
Took a few home and popped them in the freezer..
Do you guys think that freezing them might replace the frost effect?
Always heard they are bitter until after the frost..

Putting the persimmons in your freezer, to make them less astringent, works very well. The cell walls break down. The tannins then leak out and attach to other chemicals, making them no longer effect your saliva, which is what causes that unpleasant puckering in your mouth.

I get the Asian persimmons at the Russian grocery store, I love those things. I don't think they need to go through a freeze like the regular persimmons. If I thought I had enough years left in me I'd plant me a couple of trees. Does anyone know if they grow in the PNW? Beaverpeeler?

Absolutely they do. When I was doing crop inspections back in the late 80's there was an orchard near Independence, Oregon of about 100 trees. They were loaded!
