If you have an egg is suspect break it in a small dish or cup. That's what my mother always did and works for me. You'll know if its funky.

Eggs gain air as they age. If they float in water; they are suspect. Maybe still good, maybe not. Crack them into a bowl. You'll know if you want to use them or not.

if you coat eggs with mineral oil they will last indefinitely without refrigeration. That might make sense. When layed, eggs have a natural "bloom" to protect them. Commercial eggs get washed, removing that bloom, and therefore require refrigeration. I suspect that mineral oil is to replace the natural bloom.
