How long can store bought eggs keep in the fridge past the expiration date? I know everything has a date on it nowdays, but I was curious what everyone else has for a opinion.

Yup, and I don't refrigerate eggs. They sit on my counter and get used long before I would even think about worrying.

If you have an egg is suspect break it in a small dish or cup. That's what my mother always did and works for me.
You'll know if its funky.

I'd just get them used if they were near the expiration date. Scrambled eggs, home made pudding or home made egg noodles, deviled eggs, etc... lots of great ways to use up eggs.

Eggs gain air as they age. If they float in water; they are suspect. Maybe still good, maybe not. Crack them into a bowl. You'll know if you want to use them or not.

if you coat eggs with mineral oil they will last indefinitely without refrigeration.

That might make sense. When layed, eggs have a natural "bloom" to protect them. Commercial eggs get washed, removing that bloom, and therefore require refrigeration. I suspect that mineral oil is to replace the natural bloom.
