I found four big bags of deer meat in the freezer that is four years old.

It's all in vac sealed bags and there is no signs of freezer burn.

should I pressure can it or make sausage out of it?

No burn, no (slightest) hint of rancid odor ...... = good food.
Even then, likely wouldn't hurt ya, just wouldn't be very palatable.

If the vac seal is good and there's no freezer burn, and the meat has been CONSTANTLY frozen for that time It'll be fine. I've found packages that old and a few older that was almost as good as fresh, eat it however you want, no need to to make jerky or ground meat with it unless that's what you want.....

Not saying what to do with yours, but once the decision is made to give meat like that the heave, if you have chickens, grind it up and feed it to them raw. About 1 pound per dozen birds. If will look like a school of piranha feeding on a zebra.

You can always make a marinade and let it sit for a day before making stir fry. Even meat with edges freezer burned can be done this way.

All you cooks gotta put the old chefs thinking hat on.

Change the date on it to 2023 and it won't be so old. Give it to friends and relatives then.
