i want to try some different things tomorrow with whole roasting ducksl thinking of trying some differnt combinations of ingredients like hoisin ginger hot chili oil citrus soy brown sugar etc. looking for some suggestions and tips. want to experiment with things outa my wheel house

If they are wild ducks you may want to roast them breast side down. They stay a lot juicier that way. We put about an inch of apple cider in the bottom of the roaster.

yes wild ducks and as i said with several different ingredients i was thinking of foil wrapping each one separetly with different flavors in each

We usually stuff each duck with chopped celery/onion. Lay on the bottom of roasting pan with a can or two of Manning’s white hominy, and about 3/4” water. Rub the skin of ducks with flour , salt and pepper. Cover and roast for 2-3 hours depending on the number of ducks. Pretty dang good. The breast does get dry but a little gravy fixes that. The hominy / drippings are a really good side.

Last time I made one, I made sort of a fruit stuffing that included the normal celery and onions but also some diced prunes. Was delicious. Made a glaze at the end with a balsalmic reduction with spicy plum chutney cooked down. Made it kind of sweet on the crispy skin.

I use a wild rice mix with sliced smoked sausage for the stuffing. Do not over cook duck

Roasted Mallards rubbed inside with Marjoram, stuffed with oranges, and celery. Glazed outside with Maple Syrup (seals in juices), served with Wild Rice, fresh cut pineapple slices and other veggies to liking :-)

YUM!! I worked with a dude that would soak ducks and geese overnight in ginger ale, then seasoned to his liking. Delicious!


I wonder if tap dancers walk into a room, look at the floor, and think, I'd tap that. I wonder about things.....

ducks no longer come this far south. DU projects that put the screws to duck hunting down here. 23 years ago was when the decline started. the birds that did come this way shifted further east and west. a few woodies is all one can find, even this late in the season..
