No need for extremes. Just need a few tablespoons of tomatoe paste.

Needs potatoes, corn, green beans and a jalapeno. I like tomatoes in mine and personally would add a can of fire roasted diced rotel tomatoes,

Love the Wagner Magnalite roaster! I have two the medium one fits inside the big Turkey roaster. I use them a lot. Good looking stew too!!

That would turn it into vegetable beef soup. Beef stew just needs carrots, potatoes, and beef,,, well and onion.
