We are having two turkeys for about 25 guests. Also got a whole Spanish Serrano ham from Costco. People have been shaving slices from it for two days and we have 3/4 of it left. Maybe we can eat it by Sunday.

Did this guy , load mashed potatoes, green bean casserole, chicken sausage shrimp and crawfish gumbo , rice cornbread some some other stuff

Ham over domestic turkey. Might be a toss-up if it is a wild bird. Prime Rib wins hands down.... the only good tradition my ex-wife started.

Roast duck with all the fixin's

Well, like I promised, My TG meal is getting done today! . . . 2 - “double” spatchcocked 11# turkeys, and 1 - a small prime rib. Fixin’s will include sauteed Brussel sprouts, roasted red po’s, biscuits, cranberry sauce, turnips, stuffing, sweet po’s :-)))))))

I deboned a whole Turkey from the back in a couple Thanksgivings ago. Cooked it over cottonwood coals like we do chicken thighs. It was awesome. Cut it in strips with a big two handled pizza cutter when it was done. Everyone liked it. Deboned it like Jacque Pepin does chickens. Just took a little longer. lol

Been there, done all that and sometimes still do . . . but it's easier to set it and forget it . . . no worrying about temp, hauling wood, and checking the fire. More time spent with family, friends, and sip'n some good stuff or watching ball games :-)

PS, and I use REAL hickory, black cherry, oak, post oak, pecan, etc. hard wood pellets NOT just flavored wood sawdust! :-)
