Original dots pretzels ground up. Dip fillets in flour then egg them into dots pretzel mix. Then pan fry.

Louisiana Fish Fry normally.. sometimes we use Zatarain's.

I like a very light beer batter, then coat fillets with a mixture of panko and corn meal in about a 8:1 ratio. Meaning dump the panko into a pan and shake some cornmeal on top and mix it up. This is the beer batter recipe I use. I don't like how much salt is in commercial fry coatings. I much prefer to add salt as needed after frying.

Btw, if I make the beer batter recipe above, I mix all the dry ingredients and save half for my next fry. A half batch mixed with one can of beer makes a very light coating and is plenty for up to 2# of fillets.

This was perch dinner Friday evening.

All that seasoning on perch fillets is akin to eating prime rib with ketchup!

Do you use there regular batter or the Krispy fish batter.
