Egg wash then breaded up in crushed saltine crackers. Use an old cuisinart to do the crackers.

I use "Andy's Yellow " and Mccormicks "Fish Fry " and mix them up in a bag. Add fillets, shake em up, let sit for few minutes and add to hot oil. Tastes just as good cold the next day but then I'm half Norwegian. Lol

2/3 cup Drakes
1/3 cup rice flour
1 tsp baking powder

Mix with ice cold beer...guaranteed crispiest batter
