I'll be making beaver stew for our men's group meeting at the church on Monday evening. They really liked it the last time I brought it. It was also the first time. At our last meeting, I brought bear stew. No matter what wild stuff I take to the meeting, I always go home with an empty pot. I have a little over 3 pounds of beaver meat ready for the pot. That looks good and I for sure would eat your stew. Most the people who dont like wild game. Many times I have found they tried something someone just handle poorly from start. Then gets blamed on the critter for bad handling. I know you have handled more than a couple beavers .

I know what you mean Mac. I've heard so many folks say that they tried beaver and it tasted bad. In my opinion, there's no other wild meat that I've had that is better than beaver. Some may be as good, but not better. Handling it properly is the secret to good tasting beaver meat.

I agree, beaver is delicious. I won't say my favorite though, rabbit still holds that spot.

yes, anyone who said they had beaver and it was terrible, someone didn't take care of it right, That is likely the case, with my experience. Going to give it another chance, I reckon.

Those look like some big chunks of meat. Are you going to cut them up a little more? I've made beaver stew a few times and it is good but like Lugnut, I like rabbitt better followed by squirrel if I can get them cutting beach nuts. I'll cut some of the larger pieces in two. What kind of cooking pot you using? Must be a big one. What else are you putting in the stew? I bet the house will smell so good. I use a Dutch oven pot. I've done a couple pictorals on here from start to finish making beaver stew.
