this temped Med-Rare 135 I was doing some steaks for pictures the better looking steak was being photographed so I cut this one and took a few pics of my own.
America only has one issue, we have a Responsibility crisis and everything else stems from it.
Thing about steak, I don’t think there is a wrong way, but I like mine a certain doneness. It has to be pink in the middle at the most done, for my liking.
I grew up with steaks coated in flour and fried in Crisco or lard. Mom believed if you could see pink it would kill you. It was still juicy and tasty, you just have to have enough fat. If you broil or BBQ it dries out.

It's about flavor too. A well done steak doesn't have the same flavor. To each their own. I don't judge.
Swear Everytime I had a steak when some talks bout just the flavor of the meat I'm always just plain disappointed...ah yes the taste of slightly charred and bloody meat ..mmmmmm mmmmmm! Nah gotta season mine up and definitely with more then just salt and pepper

I've had well done steaks that I've LITERALLY eaten with a plastic fork, cut with a picnic-style plastic knife.
Same my dad and wife can cook them to were you pick them up and they just fall apart. Honestly don't care too much about having a super ultra tender steak don't want shoe leather or saw dust but tender and bland seem to go hand in had with a lot of folks

Only thing that looks like that around my plate is something that has been in the smoker.
Gotta have a lot of fat or marinated like crazy to not now have something cooked past medium to not be shoe leather, unless you sous vide'd it.
Nope never do anything fancy like that. Poke it up with a fork season it's toss in a bag with some olive oil for a few minutes then toss it in a skillet on medium heat
